Our egg*, made from chickpeas, plant cellulose and fibers, provides similar functional properties as whole eggs and egg whites in a variety of recipes. Perfect for gluten and allergen-free baking needs.
How to use our egg replacer:
• Measure. Replace whole eggs in your favorite baking recipes at a 1:1 ratio by weight. Alternatively, by volume, one large egg equals to 2 ounces, which is a 1/4 cup of our egg replacer.
• Meringue. Use only 80% of sugar by weight compared to Hatched Egg Replacer. Add sugar at the beginning and whip together until stiff peaks to achieve the same meringue result- just less sugar. Perfect for making vegan pavlova.
• Cakes and Muffins. Use it like eggs to achieve moist, and tender crumbs without compromising on taste.
